....MY 2 ULTIMATE FAVOURITE RECIPES OF THE SEASON~

PART 1 



I recently had a few friends of mine complain that their poor tomato plants are not turning red.  I was shocked to then here, they were going to simply compost them!

EEK !

Not at all, you can pick your green tomatoes and store them in a brown paper bag and store them in a dark and dry place - they will magically turn red.  Also, if you have 1 tomato that has begun to turn colour, you can place that one into the bag of green tomato's.  The off gases from the orange/red tomato will hurry the turning process.

MAKE GREEN FRIED TOMATOES!
(yes, it's a REAL thing)

Here's my FAV! Recipe.  You'll need:

1 clove garlic, minced
1/2 Cup fresh basil
1/2 Cup Mayo
1 Tsp. lemon juice
3/4 Cup plain, dry bread crumbs
1 1/4 tsp. salt
1/2 tsp. pepper
1/4 tsp. cumin
2 lbs. unripe tomatoes sliced 1/2" thick
3/4 Cup flour
2 eggs, beaten
1/4 Cup canola oil
12 cheery tomatoes

Step 1:

Puree garlic, basil, mayo and lemon juice until smooth.
Cover and pop into the fridge - this is your dipping sauce!

Step 2:

Combine breadcrumbs, 1 tsp salt, peper and cumin, set aside.  Sprinkle the tomato slices with the remaining salt. 

Step 3:

Place your flour into bowl and coat your sliced tomatoes with flour, shaking off the excess. 

Step 4:

Smother your flour coated tomatoes into your beaten egg and finally coat them with your bread crumb mixture  in which you made in Step 2.

Step 5:

In a non stick skillet, heat your canola oil on medium heat.  Place your covered tomatoes evenly into skillet and cook, turning only once until golden brown.  Typically this will be 3 min. per side.

Drain the excess oil on a paper towel.

Serve your fried green tomatoes with cheery tomatoes and your basil mayo sauce!
